XHTML stands for eXtensible HyperText Markup Language and is a stricter version of HTML. The internal structure of every web page is written in either HTML or XHTML. With HTML web designers were allowed to be fairly sloppy with tags or commands which was good in the early days because it made things easier for the web designers but it made things much harder for the web browsers and caused different browsers to misbehave in different ways.
The extra rules of XHTML and the reduced number of tags make XHTML easier for web browsers to read and interpret. This in turn leads to better performance and more uniform rendering (drawing) of web pages on different browsers on different platforms.
CSS is the counterpart to XHTML since many of the things in HTML that were used to format the data are no longer valid in XHTML and CSS is used to do the formatting instead.
Any web page can be checked to ensure it follows all the rules for XHTML. There is a link at the bottom of each page of this site, which will cause the page to be checked. Web developers do this to show that they are good at following these rules, but also to show that they are strongly in favour of XHTML and the other web standards that are bringing sanity to the internet (at least on a technical level).
